Ingredients

- 1 tablespoon of mustard oil - Salt, as per taste - ½ teaspoon red chili powder - A pinch of turmeric powder - 2 cups cooked rice (pakeko bhat) - 1 teaspoon cumin seed - 1 onion, finely cut - ½ cup green peas - ½ bell pepper, finely cut - 1 green chili pepper, finely chopped

Method

1. Heat a pan on medium flame and add the oil. 2. Once the oil is hot, add cumin seeds and let them crackle for few seconds. 3. Add the cooked rice along with salt, turmeric powder and red chilli powder. 4. Stir and mix everything properly. 5. Cook the rice without covering it for about 2 minutes. 6. Add the onion, green peas, bell pepper and chili pepper to the pan. 7. Mix everything together and let it cook on low flame for 3 more minutes or until vegetables are cooked through but still a little crunchy. 8. Turn off the heat and serve hot Vegetable Fried Rice with a sprinkle of lemon juice or coriander leaves as garnish (optional).
