Ingredients

- 2 tablespoons cooking oil - 1 teaspoon garlic minced - 1 teaspoon ginger minced - 2 fresh red chili peppers - ½ cup tomatoes diced - 1 tablespoon fresh cilantro minced - 1 teaspoon cumin seed toasted - ½ teaspoon turmeric powder - ½ teaspoon Szechwan peppercorn (timur) - ⅛ teaspoon asafoetida (thing) powder - 1 tablespoon lime juice freshly squeezed - 1 liter chicken broth or stock - 2 cups assorted vegetables diced (carrots, potatoes, beans, green onions etc) - 2 cups cooked spaghetti - Salt and pepper to taste - Grilled chicken slices (optional) - Cooked rice noodles (optional) - Hot chili sauce or tomato achar (optional)

Method

1. Boil half liter of water in a big pan. When the water starts having bubbles add the spaghetti. 2. In the same time, take a blender and mix all soup paste ingredients into a thick paste; reserve in a small bowl. 3. When the spaghetti is soft, remove the heat and soak the excess water. Wash the spaghetti in running cold water. 4. In a saucepan, heat cooking oil; add soup paste, fry for about 30 seconds 5. Add chicken broth and mix well. Bring to a boil; set heat to low and cook for a few minutes; adjust seasoning with salt and pepper. 6. Add all vegetables into the soup mixture; cook for a few minutes or until tender. 7. Add the spaghetti in the mixture 8. You may add more broth if a soupier consistency is desired. Adjust seasoning with salt and pepper. 9. To serve, pour soup broth into a serving bowl and add grilled chicken slices and cooked rice noodles. Serve immediately. 10. Add hot chili sauce or tomato achar to the soup if you desire spicy soup broth.
