- 2 tablespoons oil- 1/2 teaspoon fenugreek seeds- 3-4 cloves- 3-4 chopped green chilies- A pinch of turmeric- 1/2 chopped onion- 1/2 tablespoon cumin powder- 1/8 tablespoon Szechuan pepper ot timur (optional)- 1/2 tablespoon red chili powder- 1/2 tablespoon coriander powder- A pinch of black pepper- A pinch of garam masala- 1 cup plain yogurt- 3-4 potatoes


1. Boil and peel potatoes and cut into small pieces.2. Add a pinch of salt and a squeeze of lemon juice to season potatoes.3. Heat two tablespoons of oil in a pan on medium heat.4. Add fenugreek seeds, garlic, green chilies, and turmeric and fry until the mixture is browned.5. Add the potato chunks to the pan and cook for 5-7 minutes until they are lightly golden browned.6. Now add all the remaining ingredients (except cilantro) - cumin powder, Szechuan pepper Timur (optional), red chili powder, coriander powder, black pepper, garam masala and yogurt – stirring each ingredient well before adding the next one.7. Simmer for around 10 minutes until the sauce thickens.8. Finally, add chopped cilantro and stir everything together.9. Serve with rice or roti, and enjoy!
