Ingredients

- 1 lauka (mature bottle gourd) - 2 potatoes - 1 cup curd - 1 teaspoon cumin powder - 1 teaspoon coriander powder - 1 teaspoon red chili powder - 1 teaspoon salt - ½ teaspoon turmeric powder - 3 bay leaves - 1 onion - 1 tablespoon tomato puree - 2 teaspoons oil - ½ teaspoon fenugreek seed - ½ teaspoon thyme seed

Method

1. Wash and cut the lauka and potatoes into desired shapes. 2. In a bowl, combine the vegetables with curd, salt, cumin powder, coriander powder, red chili powderturmeric powder and bay leaves. 3. Mix everything together and let it marinate for the whole night. 4. In the morning, heat up a pan and add oil and fenugreek seed and thyme seed. When they turn golden brown, add in the marinated mixture and cover it with a lid. 5. Cook the mixture on low flame for about 15 minutes (or one whistle in pressure cooker). The lauka is done when thick gravy forms and smells good. 6. Serve hot with rice or roti! 7. Enjoy!
