Ingredients

- 1 liter milk- Lemon juice (as needed)- Sugar (according to your taste)- 1 teaspoon cardamom powder- 5 to 6 almonds, finely chopped- 10 to 12 pistachios, finely chopped- ¼ teaspoon fatkiri (alum)

Method

1. Take one liter of milk in a big pot and start boiling it on medium flame.2. In another medium size pot, boil the remaining milk and then take it off the heat. Once the boiled milk cools down a bit, add lemon juice and stir continuously until paneer forms slowly in the mixture.3. Add paneer and mix it properly in the boiled milk until there are no lumps in the mixture.4. Let this mixture boil until all the water is dried out of it, stirring continuously so that there are no lumps formed.5. Once all the water has been evaporated, turn off the heat and add sugar according to your taste, cardamom powder, chopped almonds and pistachios. Mix everything properly.6. Grease a plate with ghee or butter and spread this mixture on it evenly using a spoon or spatula and tap it gently so that its surface becomes smooth.7. Garnish with finely chopped pistachios and almonds for decoration if desired.8. Put the plate in refrigerator and allow it to set for two hours.9. Your Kalakand is now ready to be relished!
