Ingredients

- 500 gms lady finger/ okra (ramtoriya/ bhindi) - 2 onions (sliced) - Few fenugreek and thyme seed - 1/4 table spoon turmeric powder - 1/4th tea spoon red chili powder - ½ tea spoon cumin powder - ½ tea spoon coriander powder - ½ tea spoon garam masala - Salt to taste - 2 table spoons vegetable oil

Method

1. Cut the lady finger in circular shapes (before cutting wash the lady finger properly, don’t wash after it is cut) 2. Heat a pan and add vegetable oil in it when oil is hot add fenugreek and thyme seed into it 3. Turn those two golden brown add the lady fingers 4. Stir it properly; add salt and turmeric powder (you may add turmeric powder when the oil is hot too) 5. Let it cook uncovered in medium heat for about 10 minutes 6. Slowly lady finger turn smaller and crunchy 7. When all these pieces looks crunchy add coriander powder, Garam masala powder and cumin powder 8. Stir it properly and add the red chili powder 9. Let it cook for 5 more minutes
