- 2 lbs boneless chicken breast (cut into small cubes)- 1 onion (quartered)- 1 large bell pepper (cut into medium pieces)- 8 green chilies (cut into two pieces each)- 3 large tomatoes (chopped)- 1 tablespoon of chili powder- 1 teaspoon cumin powder- 3 tablespoons tomato ketchup- A pinch of fenugreek and thyme seed- Chopped cilantro to garnish

Method

1. Heat oil in a pan and add the onion, green leaf onion, and bell peppers. Cook for 2-3 minutes until tender but not fully cooked.2. Add turmeric and salt and take off the heat.3. In another pan, bring 1 cup of water to a boil, then add the cubed chicken pieces and simmer until they turn white. Take off the heat, drain any remaining liquid, then add to onion mixture above.4. Stir in cilantro, cumin powder, red chili powder and mix everything together. Keep stirring until chicken is cooked through (about 8-10 minutes).5. Once chicken is cooked through, take it off the heat and stir in tomato ketchup.6. In a separate pan, heat one tablespoon of oil and add the fenugreek and thyme seed. Once they turn golden brown, add the pieces of green chilies. Take off the heat and pour this mixture on top of the chicken chili. Cover for a few minutes to allow flavors to combine.7. Serve with chopped cilantro sprinkled over the top!
