Ingredients

- 1 cup of bamboo shoots - 2 cups of peeled and cubed potatoes - 1 cup of black-eyed peas soaked overnight - ½ cup of finely chopped onions - 1 teaspoon of chili powder - 1 teaspoon of minced garlic - 1 teaspoon of minced ginger - ½ teaspoon of turmeric - 2 red chilies, whole or crushed to taste - 1 teaspoon cumin powder - ½ teaspoon freshly ground pepper - 1 cup chicken or vegetable broth - 1 cup chopped tomatoes - 2 tablespoons oil - Salt to taste

Method

1. Heat the oil in a large pot over medium heat. 2. Add Masyaura and fry until golden brown. Remove from the oil and keep aside. 3. Add red chilies, fenugreek seed, and thyme seed to the same oil. Fry until they turn red. 4. Add onions to the pan, and cook until golden brown. 5. Add black-eyed peas and tomatoes to the pan, stir for a few minutes before adding potatoes into it as well. Stir for about five more minutes or until potatoes are slightly softened. 6. Now add bamboo shoot pieces and mix everything together, cooking for another few minutes before pouring in chicken or vegetable broth as needed for desired consistency of your curry dish. 7. Add cumin powder, coriander powder, red chili powder and fresh coriander leaves to the pot. Stir everything together and let it simmer for few more minutes. 8. Taste test the curry for salt and adjust according to your preference before turning off the heat. Serve over steamed rice for a complete meal.
